You may have driven past Drizzles Bakery and not even have noticed it. On the outskirts of Bellevue’s Old Towne area, Drizzles is a tiny bakery that you might blink and miss. Here is a word to the wise: don’t blink and miss this place. This is an exceptional bakery.
More than once I’d been asked by people if I had yet visited “that small bakery in Bellevue.” Had I known there was such a thing as a baked banana donut with chai frosting sprinkled in chocolate I would have visited Drizzles much sooner, but I suppose it’s better late than never.
Owner Mary Pat Guerrier opened Drizzles in June 2012. She’s baked her entire life, as is evident by her original Easy Bake Oven on prominent display in the bakery. Mary spent quite a bit of time working as a social worker but when the assisted living residence where she worked closed, she decided it was time to finally pursue her dream of owning her own bakery.
It isn’t easy. Drizzles is a one-person operation, meaning Mary is the one to show up and bake everything in the morning and is the one who cleans up at the end of the day. On the other hand, she loves every moment. “It’s a long, hard day,” she admits, “but I cannot believe that people are paying me to do what I want to do. I think more people should do their life’s passion.”
Not only are people paying her to do what she loves, but they are loving what she does. Drizzles has quickly become “The Place” to get donuts. “I had a woman call from North Omaha who asked me if I had a few dozen donuts I could set aside for her to pick up,” says Mary. “I asked her where she was going with the donuts and she said right back to North Omaha. I love that she would drive all the way here and back just for my donuts.”
Drizzles offers a variety of delicious baked goods including cupcakes, cake pops and caramel apple crisp, but really, it’s the donuts that are ridiculously good. When she originally opened Drizzles, Mary had not even planned on offering donuts. It was because of repeated customer requests that she decided to research options for baked donuts. “I don’t even have a fryer here,” she says, which led her to experiment with a few different recipes before settling on the one she uses now.
The donut flavors you encounter when you visit Drizzles depends largely on what Mary feels like baking and what customers have been requesting. I visited right before Thanksgiving so there were plenty of seasonal pumpkin flavors available, and right now she’s probably concocting some eggnog delicacies. I tried the caramel apple donut, which surprised me right off the bat with the tiny chunks of apple within my first bite. Covered in an abundance of cinnamon, this donut would have been far too much to handle had it been fried. Baked, however, this was a delicate balance of flavors that made me pause to enjoy the taste before frantically scribbling in my notebook that this donut is remarkable.
Let me also tell you about that banana chai donut I mentioned earlier. The donut itself was moist and flavorful, but it isn’t until you chew for a little while that the chai taste shows up. This layering of flavors
makes for an amazing taste. Years down the road when I am inevitably in a conversation about the best donut I’ve ever eaten (because those conversations do come up, don’t they?) I’ll reference this donut.
You should know that Drizzles has a very limited seating area and equally limited hours of operation. In other words, don’t plan on holding a huge business meeting there and don’t get mad if you show up at 9:30 PM and the doors are locked. While there are a few tables and a cozy, welcoming atmosphere at Drizzles, these donuts are even more impressive when you waltz into an office with a dozen or so.
