Chef Derick’s new potato salad is a Greek inspired fusion with Southern swag. Yukon gold and red potatoes set the stage. Multi colored bell peppers and onions add a satisfying crunch. Scores of black olives, green olives and capers add an incredible tang.
Vegan mayo adds a familiar dimension of creaminess. Chunks of tofu egg are added for protein and complements the classic flavor profile. Hints of herbs and mustard seeds seal the deal.
